Salmon ice cream competes in Symphony of Seafood

Competition in the Alaska Symphony of Seafood has had a variety of wild Alaska salmon entries over the years, but never before ice cream.

Yes, the food service entries in this year’s event include Candied Salmon Ice Cream, from Mac Wheeler, owner of Coppa, a Juneau-based retail store whose products include coffee, homemade ice cream and local foods.

The 24th annual Alaska Symphony of Seafood is to begin with the private judging of entries in Seattle on Jan. 25.  Following the judging, an open house will be held.

A second Symphony event is slated for Juneau on Feb. 22nd.

Also in the food service competition are canned smoke sockeye salmon by Seattle’s Deckland Seafoods; seafood cakes with Dungeness by Odyssey Enterprises, Seattle; Albondigas (Mexican seafood soup) by Orca Bay, Renton, WA; and Sealegs Real Simple Surimi, by Seattle’s Trident Seafoods.

Retail entries include Alaska smoked sockeye salmon and Alaska Salmon Bites from Authentic Alaska, LLC, Juneau; Sockeye Salmon Bisque, by Bambinos Baby Food, of Anchorage; Sockeye Spinach Feta Salmon Burger, by Odyssey; Jjamppong (Korean Seafood Noodle Soup) by Orca Bay; SeaFare Pacific Salmon Chowder, by Oregon Seafoods, Coos Bay, OR; and Louis Kemp Hawaiian Poke Snackits, by Trident Seafoods.

There are also four entries in the Beyond the Plate category, which includes non-edible products made from seafood, and two in Beyond the Egg, products made with different species of roe such as salmon, pollock, cod, herring or urchin.
