Alaska ski resort chef enters national seafood cook-off

Procedure has become quicker, easier

Chef Wes Choy of Alyeska Report Kitchens in Girdwood will represent Alaska in the 17th annual Great American Seafood Cook-Off in New Orleans on Aug. 7.

Chefs will compete in front of a live audience and a panel of nationally acclaimed judges at the city’s Ernest N. Morial Convention Center.

Choy, who is originally from New York, earned a bachelor’s degree in accounting followed by a culinary arts degree and went on to become an award-winning chef in Las Vegas, and did seasonal stints in Aspen, Colorado before venturing to Alaska in 2014, where he has remained.

During the competition, each chef will prepare a dish highlighting the use of domestic seafood while interacting with the audience. Each dish will be presented to the judges, who will score based on presentation, creativity, composition, craftsmanship and flavor.

The event is held in conjunction with the Louisiana Restaurant Association Foodservice Expo.

Other competing chefs will represent Alabama, Arizona, Florida, Guam, Louisiana, Maine, Massachusetts, Mississippi, Montana, Pennsylvania, South Carolina and Texas.
